We sieved grounds from every grinder at three settings and weighed the distribution to compare consistency. Retention was measured by single-dosing 18g and reweighing the output.
Flat burrs delivered the cleanest espresso results, while conical burrs were more forgiving for filter brewing and noticeably cheaper to maintain.
Spare burr availability in the UK is worth checking before you buy. Two popular imports had a ten-week wait on replacement parts at the time of writing.
